Past President
Courtney Hoikkala
Senior Learning and Development Specialist, Sanford Health
Courtney chose to serve on the NDNC Board to help promote healthier communities across the state and support evidence-based nutrition education. She is passionate about advancing public health through education, collaboration, and sustainable nutrition practices.

Fun Fact:
Courtney is always up for an adventure—whether it’s snorkeling the Great Barrier Reef, hiking the Swiss Alps, or tracking down the best local eats, she's all about making unforgettable memories!

Past President
Ashley Johnson
WIC, CLC, CBS, DBE serving in Pembina, Walsh and Cavalier counties
Ashley and her husband, Kameren have five children and two dogs. Ashley says their house is always busy in the best way. She has a passion for rural health and wellness and loves working with like minded people all over North Dakota.

Fun Fact:
Ashley lives in the country and enjoys being outside- camping, hunting, & kayaking are some of her favorite things to do when she's not on a ball field watching her kids playbaseball or softball.

President
Nathaniel R. Johnson
Assistant Professor, Department of Nutrition and Dietetics, UND
Nathaniel lives in Grand Forks with his wife, two children, and a dog named Murphy. He is very family oriented and chose to run for NDNC President because he wants to improve the food agency (a household's ability to prepare healthy meals) of all North Dakotans.

Fun Fact:
Nathaniel enjoys barbecuing and lifting weights—what a perfect combo!

Secretary
Cindy McNaughton
Grand Forks County WIC Nutrition Program - Nutritionist II
Cindy lives in Grand Forks with her spouse and two dogs. She has been attending the annual NDNC conferences for many years and recently felt called to run for a position on the NDNC board and give back to the organization.

Fun Fact:
Cindy loves the outdoors. She especially enjoys hiking, camping, and grilling. If she could, Cindy would cook every meal over an open flame.

Treasurer
Katie Johnke
Nutrition & Health Promotion Coordinator; Bismarck-Burleigh Public Health
Katie lives in Bismarck with her spouse, three children, two dogs, and a cat. She values being on the NDNC board because it allows her to connect with other nutrition professionals across the state whom she might otherwise not regularly get to work with.

Fun Fact:
Katie finished Grandma's Marathon with a Boston Qualifying time (BQ) in June 2025.

Membership
McKenna Marek
Public Health Dietitian - Grand Forks Public Health
McKenna lives in Grand Forks with her husband, two children (Beau and Laken), and two golden retrievers (Zeke and Thor). She likes opportunities for professional growth, and serving on the NDNC board seemed like an awesome way to expand her knowledge.

Fun Fact:
McKenna enjoys playing sand volleyball with her friends in the summer and cozying up with a hot cup of coffee and a book in the winter.

Communications
Julie Garden-Robinson
Professor and Extension Food and Nutrition Specialist, NDSU Extension
Julie has been on the board in various positions since 1995, including serving as president twice. She initially joined NDNC to get to know professionals in the field, but she has remained involved to stay current on issues in nutrition and help design learning experiences for members.

Fun Fact:
Julie is a musician. She has coordinated contemporary music at her church since 1999, and she plays the flute in a community band.

Education Chair
Erin Lauckner
Clinical Assistant Professor, UND
Joining NDNC was a no-brainer for Erin because she is passionate about community nutrition and wholeheartedly believes in the mission of NDNC.

Fun Fact:
Erin has three rescue kittens (Obi, Anakin, and Jinn)! She also loves to garden, cook, read, watch Star Wars, and spend time with family and friends.

Student Liaison
Emma Rybchinski
Junior at UND
Emma graduated Dakota College at Bottineau with two associate degrees, and she is now studying dietetics at UND. She wants to become a registered dietitian to help people develop a healthy relationship with food.

Fun Fact:
Emma played college softball for two years at Dakota College at Bottineau before attending UND.

Gabriella Haines
Graduate Student at NDSU
Gabby became interested in nutrition when she started an after school weightlifting program in middle school. She would like to combine her two passions for nutrition and exercise by working as a sports dietitian in the future.

Fun Fact:
Gabby loves to play pickleball and go for long walks while listening to her favorite podcast (Mind Pump).

Anna Strand
Senior at NDSU
Anna decided to major in nutrition science because she believes everyone deserves to be properly nourished. She hopes to pursue a career in public health after graduation.

Fun Fact:
In May 2024, Anna had the opportunity to travel with NDSU Study Abroad to Sardinia, Italy to learn about healthy aging in Blue Zones.

Aunika Bosch
Graduate Student at NDSU
​Aunika chose to study nutrition science because she has always loved helping people, and she believes that food is the best medicine. Her goal is to start a private practice focused on holistic women's health.

Fun Fact:
​Aunika finds joy in activities like weightlifting, walking, and running. She also loves to spend time outdoors with friends and family, especially in the summer.
